Koren Grieveson is Food & Wine’s 2008 Best New Chef

What is it about Chicago that is drawing celebrity chefs? You will recall Marcus Samuelsson the Ethiopian chef who opened a restaurant in Affinia Hotel. Enter Koren Grieveson, a South African chef who opened one of Chicago’s trendiest restaurants, Avec. Food & Wine named her a 2008 Best New Chef.

She helped launch the wine bar at the restaurant with Paul Kahan, her mentor and a Best New Chef winner in 1999. Grieveson has lived in Angola, Iraq, England and Brazil, catered for the entertainment industy, and served as a soldier in the U.S. Army for nine years. Somehow all this inspired a desire to attend the Culinary Institute of America and become an award winning chef. Not bad!
